The Paris-based Turkish writer shares her recipe for the perfect morning spread that lasts for hours and is meant for sharing.
Ayşegül Savaş likes to take her time. Raised between Turkey and Denmark, the author of two (soon to be three) acclaimed novels has always relished in the hours spent conversing with friends over last rounds of drinks or cycling together around the city of Paris, where she is currently based. Her debut novel, released in 2019 and titled Walking on the Ceiling, is a beautifully melancholic tale that takes inspiration from Savaş’ experiences living in Istanbul and Paris. The writing in her second book, White on White (2021), was likened to an austere painting by The Guardian. Set to be released this July, Savaş’ third story, The Anthropologists, explores the joy of friendship and lazy breakfasts, which the writer believes should last for many hours.

- Black tea
- Feta cheese
- Soft-boiled eggs
- Olives (green and black)
- Tomatoes
- Mounds of fresh herbs
- Walnuts
- Za'atar
- Jams (sour cherry, strawberry, apricot)
- Clotted cream
Instructions
- Stew a pot of black tea.
- Soft-boil eggs.
- Chop up whatever fresh herbs you have (basil, mint, parsley, rosemary).
- In the middle of the table, arrange a spread of boiled eggs, olives, tomatoes, herbs, walnuts, za’atar, jams, clotted cream, and pita bread for dipping.
