Alessandra Codinha’s high-low take on a party staple is always a crowd-pleaser..
For Alessandra Codinha, the element of surprise is key. “With entertaining, the aim should always be to surprise and delight whenever possible,” she tells Family Style. Unsurprisingly, the LA-based writer and editor takes the same approach in her work, from pieces on wild elephant poaching to RuPauls Drag Con, and more recently, interviewing megastar Billie Eilish. With Codinha, expect the unexpected. Her go to hors d’oeuvre, for example? Caviar heaped on Eggo waffles. “Though I’m always happy to see it, caviar with potato chips at a party is pretty de rigueur these days,” she tells Family Style. “They’re always gone too quickly to get any good photos,” she adds. “In my house, that counts as a rave.”
Ingredients
- 1 box of Eggo waffles
- Caviar (traditionally you want around 1-3 ounces per guest, whatever you don’t use is great on a soft scramble the next morning)
- Optional accoutrements: Dealer’s choice
- crème fraîche
- lemon (cut into sections)
- chopped chives and/or shallots
- chopped hard boiled eggs (separate whites and yolks)
- capers
