Kyle MacLachlan has specific rules when it comes to roasting his cruciferous of choice.

What keeps the actor’s actor going? A passion for discovery—and roasted cauliflower, a vegetable so flavor-packed that even his 15-year-old son will eat it.
Ingredients
- 1 cauliflower head
- A couple tablespoons of olive oil
- 1 1⁄2 tablespoons cumin, more to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 2 tablespoons finely grated Parmesan
- 2 tablespoons panko
- A splash of white vinegar
Instructions
- Preheat a baking sheet to 375 degrees Fahrenheit.
- Render the head of cauliflower into bite-size pieces. (Not too small!)
- In a bowl, coat the cauliflower in olive oil.
- Add cumin, smoked paprika, salt, panko, Parmesan... add more or less spice as you wish!
- Mix with your hands to coat the cunning, cruciferous cauliflower.
- In the bowl, splash the vinegar onto the veg, give it one last toss, and then fling those bad boys onto the preheated baking sheet.
- Roast for about 45 minutes, stirring occasionally.
- Add more Parmesan during the last 5 minutes of cooking.
- Don’t stack the cauliflower! You want the pieces to roast, and if they’re too close they’ll steam and come out soft.
