Laura May Todd shares a family recipe for pasta sauce—uncomplicated and warm.
Laura May Todd is a design writer—and one with great taste. The Canadian-born, Milan-based journalist recently published a book called How To Get Away: Cabins, cottages, hideouts and the design of retreat, 2021. For Family Style, Todd shares a recipe for a simple, comforting dish best enjoyed with loved ones. “Salsa rosa (or simply, pink sauce) is the kind of no-fuss pasta sauce my in-laws make on a weeknight or Sunday lunch,” Todd says, specifically at herhusband’s 93-year-old grandmother’s house, on“a small farm deep in the Apennine Mountains where the family meets without fail every Sunday.”
Ingredients
- Olive oil
- Tomato concentrate
- Passata
- Panna (heavy cream)
- Flour
- Milk
- Salt and pepper
Instructions
- Cover the bottom of a pot with a generous amount of oil and let heat.
- Add passata and tomato concentrate (about one or two tablespoons each depending on how many people).
- Cook for about a minute.
- Add approximately 3 parts panna to 1 part tomato. Cook for a few minutes.
- Mix a bit of flour and milk together (not too much, this is just for consistency).
- Remove a few spoonfuls of the tomato and panna mixture and mix it with the milk and flour. Add it back to the pot.
- Cook for 2 to 3 minutes
- Add salt and pepper
- Serve with fresh tortellini and enjoy!
