Sean Thor Conroe doesn't hold back—both in his writing and in his chicken soup recipe from scratch.

Much like his palmy, 2022 novel Fuccboi, writer Sean Thor Conroe gives it to us raw—ingredients that is. His cozy, homemade-chicken soup calls for a cornucopia of fresh vegetables and, of course, chicken. It’s perfect for those days where you’re feeling under the weather, striped, or in need of a boost, Conroe tells Family Style. “I got sick last week, made this, and ate only this for 72 hours, then I was better,” he says. Conroe adds he prefers a homemade stock for more control over proportions. “I like making the stock from scratch and going crazy with the lemon, the ginger, and the garlic.”
Ingredients:
- 2 pounds bone-in chicken
- 1 large potato
- 1 large onion
- 4 carrots
- 4 celery stalks
- 4 garlic cloves
- 1 ginger stalk
- 1 tablespoon apple cider vinegar
- 1 lemon
- Salt
- Pepper
Instructions:
- Put bone-in chicken directly into a pot with scrap onion or celery.
- Add cold water to cover, with a splash of apple cider vinegar.
- Bring to a boil and then simmer for one hour.
- Chop onion, carrots, potatoes, celery, ginger, garlic.
- Once the chicken is cooked, remove it from the pot and separate the meat from the bone.
- Run the broth through a strainer.
- Throw the chopped veggies back into the strained broth, along with the deboned chicken.
- Add pink Himalayan salt and black pepper and the juice of a lemon.
