The New York-based fashion stylist, creative director, and brand consultant prefers his toast British-style.
When it comes to breakfast, Tony Irvine keeps it classic. Even after living in the U.S. for the past 17 years, the Scottish-born fashion stylist, creative director, and brand consultant still finds himself craving beans on toast. Irvine, who studied womenswear fashion design at London’s esteemed Central Saint Martins school, first moved to New York to assist Joe McKenna. Since then, Irvine has made a name for himself consulting and styling for brands including Jil Sander, Balenciaga, Calvin Klein, and Coach. Yet, despite the glitz and glamor of the New York fashion scene, he holds onto his love for this simple yet delicious meal to start the day—which he insists on always enjoying with a cup of English breakfast tea with milk on the side.
Ingredients
- Can of Heinz beans
- Two slices of whole wheat bread
- Butter
- Cracked black pepper
- Optional: grated cheddar cheese, chili flakes, and a poached egg
Instructions
- Poach egg and set aside.
- Put the beans in a pot over medium-low heat.
- Put the bread in the toaster.
- Generously butter the toast.
- Stir the beans until almost boiling, but don’t allow to boil.
- Place the toast on plates and spoon ⅓ of the beans over each slice.
- Top with cracked black pepper, grated cheddar cheese, chili flakes, and a poached egg.
- Serve immediately with a cup of hot English breakfast tea.
